Comforting Chicken & Rice Soup

It’s that time of the year again, when colds, flu, RSV, and mycoplasma pneumonia are circulating. If you or your loved ones are feeling under the weather, a pot of this comforting chicken soup will help nurse everyone back to good health. (I taught my husband how to make this soup, which he does when I am not feeling well.)

Research shows that chicken soup, which is loaded with nutrients, has anti-inflammatory benefits and can ease respiratory symptoms. What’s more, garlic and thyme both have antiinflammatory and antimicrobial properties. Thyme’s active compounds, particularly thymol, contribute to these effects, which may help in reducing inflammation and fighting infections. Garlic has strong anti-inflammatory properties due to its sulfur compounds, particularly allicin. Additionally, celery, carrots, and onions (sulfur) are all anti-microbial vegetables, and the salted liquid provides one of the best ways to hydrate during illness.

Comforting Chicken & Rice Soup

Prep Time 20 minutes
Servings: 8

Ingredients
  

  • 2-3 lb. organic chicken legs or 2-3 lb. boneless chicken breasts
  • 6 cups water or as needed to cover
  • 3 organic stalks celery
  • 1 pound organic carrots
  • 1 large organic onion
  • 2 cartons organic chicken bone broth
  • 2 cups organic brown or wild rice
  • 1 pinch organic dried thyme
  • 1 pinch organic poultry seasoning
  • 1/2 tsp. organic dehydrated minced garlic
  • 1 pinch organic dried basil
  • 1/4 cup organic fresh parsley Save some for garnish.

Method
 

  1. Chop carrots, celery and onions.
  2. In a large stock pot, add the chopped celery, onion, carrots, chicken, water, bone broth, minced garlic and spices. If using boneless chicken, chop into bite-sized pieces.
  3. Bring to a boil over high heat, then add rice.
  4. Reduce heat to low to medium and simmer for approximately 90 minutes.
  5. Once cooked, if using bone-in chicken, remove bones from chicken, return chicken pieces to the pot and enjoy.
